Sap Coffee
1 French Press
4 +/- Tablespoons of Vermont Coffee Company Beans- Rough Grind
2 – 2 1/2 Cups of Boiling Water
1/2-1 Cup Sap- My Half boiled Sap.Liquid will vary based on the size of your press, and how sweet you want your coffee.
Place, Coffee, Water and Sap into the press. Stir with wooden spoon for 45 seconds.
Now, this is the part of the recipe I ALWAYS have trouble with. Walk away for 10 minutes.
This is what spurned the pancake receipe below — the need to do something while waiting for my little piece of caffeine paradise!
Pour, taste, flavor to your liking and ENJOY!
Sap and Brown Butter Pancakes-
1 1/2 Cups All-Purpose Flour
2 Tablespoons Sugar- Optional- Adjust according to your sweet tooth.
1 1/2 teaspoons Baking Powder
1 teaspoon Kosher Salt.Most recipes, suggest mixing the liquid ingredients together in a separate bowl and then combining with the dry. I skip this step. The Wee-One loves to stir, so I just add stuff to the bow as I go along, and she stirs. It makes it more fun for the whole family and I haven’t noticed a difference in the batter
1 Cup +/- Soy, Almond or Coconut Milk- regular flavor, or Cow’s Milk.
1/2 Cup of My Half boiled Sap
2 Tablespoons Butter, Melted and Browned.
2 Large EggsMix it all together. If it looks too think, add some extra milk or sap. Cook like you would regular pancakes.
Caution: Due to the sugar content in these, they will have a tendency to burn a little easier than regular ones.
Enjoy with melting butter and fresh maple syrup.Strawberry Salsa
1 Quart Strawberries- Diced
1 Red Pepper- Diced
1 Red Onion- Diced
1 Small Bunch of Mint or Cilantro
½ Jalapeño Pepper- Chopped very fine.
2 Garlic Cloves- Chopped
1- Lime Juiced and Zested.
4 Dashes Cholula Hot Sauce
1 Splash of Balsamic Vinegar
Kosher Salt and White Pepper to Taste
Mix, Chill and Serve.
Feel free to adjust jalapeño and Cholula hot sauce as needed. This makes a mild to medium salsa.

Chips and Strawberry Salsa
Topping for Fish
Topping for Grilled Chicken or Pork
Condiment for Sandwiches or Wraps.
Addition to Salad
Chilled Strawberry Soup
1 Quart Strawberries- Halved
4 Cups of Orange Juice
1 Cup of Cream
Salt, White Pepper and Nutmeg to taste.
Places in Blender and blend until smooth.
Add additional Orange juice if it is too thick.
Chill.
Serve Cold with a Dollop of Strawberry Salsa\
Strawberry Butter
1 Pound of Softened Salted Butter
1 ½ Cups Sliced Strawberries
¼ Cup Shallots
White Pepper
Place all in Mix Master, Food Processor or Bowl with hand mixer.
Beat until well combined.
Chill and Serve-
Serving Suggestions-
Buttered Toast, or Biscuits
Melted on Grilled or Broiled Fish
As a topping for Chicken or Pork.
To use in place of butter in many recipes where a strawberry flavor is desired.
Strawberry Salad Dressing
2 Cups Strawberries- Chopped
½ cups of Rhubarb- Chopped Fine (optional)
2 Shallots- Diced
½ tsp Fresh Ginger- Grated
1 Cup Rice Wine Vinegar
1 Lime Juiced and Zested,
1 Clove of Garlic Chopped
½ teaspoon Dijon Mustard
Salt, and White Pepper to Taste
2 Cups Canola Oil
A Pinch or two of Sugar or Honey if it needs to be a little sweeter.
Blend with Blender, Hand Mixer or Immersion Blender, all ingredients except oil.
When well Blended. SLOWLY add oil until the dressing becomes thick and creamy.
Chill and Serve.
